Description
Hamburger or Chicken Tacos that are quick to fix.
Ingredients
1 lb of fresh hamburger or cooked shreded chicken
1 can of Rotel mild tomatoes or green chilies
1 tbsp celantro fresh or dried
1 clove garlic or 1/2 tsp garlic powder
1/2 cup lemon juice
10 corn tortillas
8 oz pkg finely grated cheddar cheese
1 small onion. chopped finely
1/2 cup canola oil
Directions
Cook hamburger until browned drain excess grease, set aside. In small skillet add canola oil and fry tortillas about 2 or 3 sec each side in hot canola oil, place on paper towels to cool. In a long glass baking dish place 1 tortilla flat, then place hamburger, onion and cheese then roll. Repeat this till all tortillas are lined up in dish. In a blender combine rotel, garlic, left over onion, celantro, and lemon juice, blend with quick pulses on chop level. This makes a salsa like sauce. Once blended pour entire salsa over the tacos be sure to cover tortillas well as not to dry out. Cover top of tacos with cheese down the center. Place in microwave oven for 3 miniutes Serve Hot. May be served with spanish rice and refried beans for a complete meal or alone.
