Grilled Chicken with Tango Mango Salsa

Description

This is a delicious entree for the diet conscious without giving up anything for flavor or visual appeal. This salsa will have your guests and family asking for more and the recipe. This salsa is excellent on fish (tilapia). My friends and family love this recipe.

Ingredients
6 Chicken Breast
(marinade) 1/2 cup Lime juice
(marinade) 1/2 cup oil
(marinade) 1 tsp cilantro
(marinade) 1 tsp chili flakes

(salsa)Dice two ripe mangos
(salsa)Dice 1/4 cup red or green peppers
(salsa)Finely chop 1/4 cup green onion
(salsa)Dice 1/2 cup strawberries
(salsa)2 Tbsp Lime Juice (fresh is best)
(salsa)1/2 tsp cilantro
(salsa)1/2 tsp chili flakes
(salsa)1/2 tsp Tabasco sauce

Directions
Marinade: 1/2 cup lime juice (fresh or jarred) 1/2 cup oil 1 tsp cilantro 1 tsp chili flakes Marinate 6 boneless skinless chicken breasts (I usually flatten my chicken breasts before marinating.) for 1-3 hrs in large zip lock baggie in the refrigerator. Turn bag over halfway through marinating process. Mango Salsa: Dice two ripe mangos Dice 1/4 cup red or green peppers Finely chop 1/4 cup green onion Dice 1/2 cup strawberries Add 2 Tbsp Lime Juice (fresh is best) 1/2 tsp cilantro 1/2 tsp chili flakes 1/2 tsp Tabasco sauce Stir all ingredients well and refrigerate for at least 1 hr. Grill 6 Marinated Chicken Breasts for approx 6-8 minutes each side on a hot grill. (They may be broiled in oven.) Test chicken for doneness with a meat thermometer according to safety guidelines. Serve Chicken with about 1/2 cup salsa on each breast or on the side.
