Description

This is a hot drink that will soothe a bad cough.

Ingredients
4-5 large lemons
2-3 oranges
1 grapefruit
4-5 cups of water (depending on how much juice you get out of the fruits)
1/2 to 1 Cup sugar, depending on your tastes
4-5 mint leaves

Directions
Juice lemons, oranges, and grapefruit into a pan. Add the water. Cut a couple slices of each and add those in too. (The peel is good for you and it makes it look pretty). Add the mint leaves and simmer over medium heat for about 15-20 min. Add sugar. Stir and let cool a little.

My mom used to make this for me when I was sick and I still crave it when I have a sore throat. Now, my kids crave it too when they get sick. Just the smell is absolutely soothing.

Description

A simple to make soup with a fresh taste.

Ingredients
3 boneless chicken breasts
1 large carton chicken broth
1 lb sliced mushrooms
1/2 cup diced celery
1/2 cup diced onions
2 cups baby carrots 
1 bunch fresh cilantro, rinsed and chopped
1 cup uncooked rice
1 tablespoon fresh black pepper
1 tablespoon chicken base
salt to taste

Directions
Cook chicken, carrots & celery in large soup pot with enough water to cover until tender. (I usually cook this in my crock pot on high for about 4hrs. Then add it to a large soup pot on the stove to finish cooking. That way I don't have to watch it, so I can do my shopping, cleaning etc.) Take chicken out of pot, reserve liquid, allow to cool, chop into small pieces. Bring reserved liquid and chicken broth to a boil; add pepper, chicken base, rice, chicken and vegetables. Reduce heat and simmer, stirring occasionally until rice is done (about 20 minutes) add fresh cilantro and turn off heat. If the soup is too thick you can add more water or broth. Add salt to taste. Serve with fresh bread or just crackers.

Description

This recipe came from several different recipes and MANY trials- I add all kinds of vegetables, changing it to taste and on availablity of vegetables

Ingredients
wok oil (oil with ginger and garlic)
sesame oil
4 chicken breasts chopped into bite sized pieces (I use natural, free range chicken)
1 bunch green onions, chopped
1 medium white onion, cut into strips
1/2 small cabbage, cut into strips
carrots, chopped
broccoli, cut into small pieces
sugar snap peas/snow peas (optional)
1 small can shitake mushrooms
2 bags or cans of bean sprouts
1 small can water chestnuts
1 small can bamboo shoots
1 bell pepper (I use red or orange) cut into strips
cooking soy or 1/2 regular and 1/2 low salt soy sauce
1 tablespoon cornstarch
1 can chicken stock/broth
other vegetables to taste

Directions
Add wok oil and sesame oil to a wok or large skillet. Add chicken and cook until no longer pink and remove from oil, leaving oil in pan. Place chicken to side. Add vegetables to wok/pan, onions, cabbage, carrots, etc. Put vegetables in order of time that takes to cook (longer goes in first). Cook until vegetables start to soften and add soy, chicken stock, and cornstarch until sauce starts to thicken up a bit (it will continue to thicken as it cools) Stir chicken back in and stir. Add additional soy or sesame oil to taste. Serve with oriental noodles. Makes about 6-8 servings.

Shrimp-Green Bean Stir Fry

My family loves this dish and it's low in fat.
Ingredients
Cooking spray
1 medium onion
1 cup sliced mushrooms, fresh is best but canned will work
1 can green beans
1 cup frozen cooked shrimp
Your favorite seasonings (we use a McCormicks blend) to taste

Directions
Spray a frying pan with cooking spray. Next, cut the onion into small wedges and add to the pan. Cook over medium heat until the onions start to turn translucent. Add the remaining ingredients and cook until heated through.

Chicken with Spinach & Pasta

Mmm mmm good!

Ingredients
4 boneless chicken breast,
3/4 cup olive oil,
4 garlic cloves- diced
1/2 diced onion
1 1/2 T. lemon pepper
2 teaspoons garlic salt
1 lb. frozen chopped spinach
1 lb. penne pasta
3 T. butter
3 T. grated parsemsan cheese

Directions
Heat olive oil in a deep skillet and add diced garlic and onion- saute for 3 minutes and then add chicken. Sprinkle spices (lemon pepper and garlic salt) over chicken and cook until brown on both sides. Once cooked, remove chicken and add a 1 lb. bag of frozen spinach and diced onion and place chicken on top; cover and simmer for 25 minutes stirring occasionally. Next, boil water with a pinch of salt and cook 1 lb. of penne pasta. Once this is done, remove cooked pasta and mix 3 T. of butter, 3 T. of grated parmesan cheese and serve with chicken and spinach. Enjoy!
