Description
At first glance this might seem complicated, but it really is a quick and delicious meal.
Ingredients
4 boneless skinless chicken breasts
salt and pepper to taste
2 tsp olive oil (divided)
1 large onion diced
4 stalks of celery chopped
1-3 cloves garlic minced
1 12-16 oz bottle BBQ sauce
1 can whole berry cranberry sauce
Directions
Pre-heat oven to 350F degrees. Sprinkle both sides of chicken breasts with salt and pepper. Sauté chicken in a pan with 1 tsp of olive oil over medium heat until lightly browned (chicken will not be completely cooked, this is OK). Remove chicken from pan and place in a 13x9 baking pan. Add remaining tsp of olive oil to pan. Sauté onions and celery until crisp tender in large pan. Add minced garlic and cook one minute longer. Add whole berry cranberry sauce to pan and mix until combined. Add BBQ sauce to pan and bring to a light boil. Pour sauce over chicken and bake in oven for one hour. Serve with rice or noodles and green beans for a full meal. Hint- For picky vegetable eaters, try heating frozen green beans in pan that sauce was cooked in. The green beans will pick up the sweet and savor taste of the BBQ cranberry sauce. You can also add some bacon (I recommend maple bacon) to your green beans to sweeten them even more.
