Description
This soup may be very rich but it is great tasting and makes for an excellent lunch or side dish.
Ingredients
1 onion diced
1 package fresh broccoli
1/2 head cabbage chopped
4 mushrooms (opt) chopped
1 bag spinach
2 vegetable bouillon cubes
1 egg
4 C. water
1/2 lb butter
8 oz mozzarella cheese
Directions
In a large pan on medium heat add one stick of butter, then add onions, and cook until tender. Then add mushrooms cook until tender, then add broccoli. (If needed add more butter) Add spinach and cook until tender, then add more butter. Add 4 cups water and vegetable cubes, (Stir well) Simmer 1/2 hr to 45 minutes. Then add cabbage. Simmer until cabbage is tender. Beat egg through the soup quickly and shut burner off. Sprinkle with mozzarella cheese on top. Serve with hot bread and salad. ENJOY!
