Description
This is like a salad rolled up in a tortilla.
Ingredients
2 to 4 Ripe Avocados,
4 Tomatoes peeled and diced
1 large Onion diced
1 fresh Jalapeno pepper ,seeded and diced
Salt and pepper to taste
Floured tortillas
1 Capful of Lemon Juice
Directions
Cut Avocados in half -remove seed and dice. Add diced tomatoes, onions and peppers to taste. It can be very hot. Add salt and pepper to taste and then add in a capful of lemon juice. Mix all ingredients together, let set for at least 1 hour, for flavors to mix. Heat Tortillas in Microwave for 20 seconds on high. Put 3 Tbsp. of the mixture in center of the tortilla and roll up like a burrito. If you have leftovers, you can put it in a processor and add sour cream to make a dip. This is very good. Enjoy!
