Chicken with Spinach & Pasta

Mmm mmm good!

Ingredients
4 boneless chicken breast,
3/4 cup olive oil,
4 garlic cloves- diced
1/2 diced onion
1 1/2 T. lemon pepper
2 teaspoons garlic salt
1 lb. frozen chopped spinach
1 lb. penne pasta
3 T. butter
3 T. grated parsemsan cheese

Directions
Heat olive oil in a deep skillet and add diced garlic and onion- saute for 3 minutes and then add chicken. Sprinkle spices (lemon pepper and garlic salt) over chicken and cook until brown on both sides. Once cooked, remove chicken and add a 1 lb. bag of frozen spinach and diced onion and place chicken on top; cover and simmer for 25 minutes stirring occasionally. Next, boil water with a pinch of salt and cook 1 lb. of penne pasta. Once this is done, remove cooked pasta and mix 3 T. of butter, 3 T. of grated parmesan cheese and serve with chicken and spinach. Enjoy!

This dish is easy to make and fun to eat.

Ingredients
1 1/2 pound lean ground beef
1 pound store made pork sausage
1 med onion chopped
1 med bell pepper{any color} chopped
1/4 bottle steak sauce (add water to make 1/2 bottle) and divided in 1/2
2 eggs
3/4 cup crushed cheese flavored crackers

Directions
Mix all ingredients in medium sized bowl but save 1/2 of steak sauce. Place meat in bread pan and pour the rest of the steak sauce on top. Bake meatloaf at 350 for 65 min.

Description
This is a recipe my mom makes and taught me. It's the only way I would eat cooked spinach! It has been a crowd pleaser at potlucks at my work.

Ingredients
2 pkg frozen chopped spinach, cooked and drained
1 8 oz pkg cream cheese, softened
1 stick butter divided (can use half stick for less fat)
1 T or more fresh lemon juice ( will have to taste test until flavor you want)
12-15 Ritz crackers, crushed

Directions
Heat oven to 350. Melt 3/4 stick butter, and combine with spinach, cheese and lemon juice. Pour into 8" casserole dish. Sprinkle cracker crumbs on top. Dot topping with small pieces of butter from remaining 1/4 stick of butter. Bake uncovered for 25-35 minutes. Serves 6 as a side dish.

1 1b. ground beef
4 slices bacon, cut into 1 in. pieces
1/2 cp. chopped onion
16 oz. can diagonal cut green beans-drained
16 oz. can baked beans
15&1/2oz. can kidney beans-drained
1/2 cp. firmly packed brown sugar
1 tea. salt
1/2 cp. catsup
1 Tbsp. vinegar
1 tsp. prepared mustard

Directions
Heat oven to 350 degrees F. In large skillet, brown the ground beef, bacon and onion, drain. Add all remaining ingredients, mix well. Pour into ungreased 2-qt. casserole. Cover, bake at 350 degrees F. for 30 min. or until bubbly.

Ingredients
1 Pkg. (17.3 oz.) Frozen Puff Pastry Shells
1 Lb. Boneless Pork Tenderloin
2 Tbs. Cornstarch
1 Can (14 oz.) Vegetable Broth
1 Tbs. Soy Sauce
2 Tbs. Vegetable Oil
5 Cups Cut-up Fresh Vegetables*
1/4 Tsp. Garlic Powder OR 1 Clove Garlic, Minced
1/2 Tsp. Ground Ginger

Directions
Bake pastry shells according to pkg. directions. Slice pork into very thin strips. Mix cornstarch, broth and soy. Heat 1 Tbs. oil. Add pork and stir-fry until browned. Remove pork. Heat remaining oil. Add vegetables, garlic and ginger and stir-fry until tender-crisp. Use a combination of asparagus cut in 2" pieces, green or red pepper strips, carrot slices, snow peas and sliced onions. Add cornstarch mixture. Cook and stir until mixture boils and thickens. Return pork to skillet and heat through. Serve in pastry shells.

Pasta with olives, mushrooms, and dried tomatoes.

Ingredients
1 pound spiral pasta
2 cloves garlic, crushed
4 ripe tomatoes cut in 1/2 inch cubes
1 small can black olives, drained and sliced
15 to 20 sun-dried tomatoes, softened and sliced
fresh basil, coarsely chopped to balance color
Olive oil, enough to cover bottom of large skillet
salt to taste
pepper to taste
dried oregano to taste
1 small package mushrooms, sliced

Directions
Cook pasta. Place olive oil in skillet. Add crushed garlic, saute until light brown. Add other ingredients, except pasta. Remove from heat after tomatoes are warmed. Toss with pasta. Sprinkle with oregano, salt and pepper to taste.

A zesty and fruity blend of flavors that may be a hit even with those who usually don't like salmon.

Ingredients
2 salmon filets
1 cup orange juice
1-3 kiwi fruits (as many as you want)
Apricot preserves (Apricot Pineapple Preserves may be used for a different flavor)
Mint leaves dried or fresh to garnish
Cajun's choice blackened seasoning

Directions
Preheat oven to 350F degrees. Rinse salmon fillets in warm water and pat dry. Place the fillets in a glass baking dish. Then spread some apricot spread (as much as you like) over the fillets. Pour orange juice over the fillets. Sprinkle the blackened seasoning to taste. Put it in the oven. Cook until the fish is tender and more whitish in color, time depends on oven. Near the end of the cooking time, peel kiwis and slice them as you might slice a lemon, and put the slices on the fillets. Take out of the oven. Plate fish. Add the mint garnish if desired. Serves as many as four if the fillets are large size. You can use steaks as well but the fillets seem to be easier.

Your favorite noodles mixed with peas & carrots, chicken, sour cream and lots of ranch flavor!

Ingredients
2-3 cups of cooked chicken (cut in pieces)
1 box of your favorite type of noodles (we use bowtie, macaroni or rigatoni noodles) cooked by directions on box
1 16 oz. container of sour cream
1 large bottle of Hidden Valley Ranch dressing
1-2 pkgs. of Hidden Valley Ranch Dip Mix
1-2 cans of heated peas & carrots
salt & pepper to taste

Directions
Boil chicken for approximately 40 mins, then cool and cut up. Next, cook noodles as per box directions and put into a large mixing bowl. Next, combine noodles, chicken, heated peas & carrots, sour cream, pkg. of Ranch Dip Mix, bottle of Ranch dressing, salt & pepper. Add additional dressing for preferred consistency. Enjoy!

Ingredients
1 can black beans, drained
1 can chicken broth
1 can Rotell tomatoes with green chiles, lime juice and celantro
1/2 cup uncooked rice
1/2 cup corn, preferrably frozen corn
sour cream

Directions
Mix together all ingredients (except corn and sour cream) and cook over low heat for 20 minutes. Add corn and reheat. Finally, serve in a bowl and add a large tablespoon of sour cream in the center. ENJOY!

Ingredients
3/4 cup apple juice
1 clove of garlic chopped
pepper to taste
6 tbsp. soy sauce
1 tbsp. butter or margarine
6 salmon filets

Directions
In a saucepan, heat the apple juice, soy sauce, butter, pepper and garlic. Bring to a boil. Let mixture cool. Place salmon fillets in a deep dish and poor marinate all over. Leave for one hour or more in the refrigerator. Grill or broil under a hot broiler for 8 to 10 minutes.

8 Boneless Pieces of Chicken
3 Tbsp. Oil
1 White Onion
Few cloves of garlic
2 Tbsp. Flour
1 Cup Chicken Stock (half chicken stock and half wine if you like)
28oz Canned Tomatoes, Diced
2 Tbsp. Parley (fresh or dried)
6 Cups of Rice

Directions
Its very simple directions.... Brown chicken in the 3 tbsp. oil until you get a nice golden color. Remove chicken from your pan when it has reached its color and put them on a plate, do not worry we are not done with them as of yet. Then add your onions and garlic to the same pan you used for the chicken, once the onions and garlic seem to look clear; then add your 2 tbsp. of flour to make something called (rue). If your rue looks a bit dry add a 1 tsp of water it should look like a paste. Add chicken stock or half and half wine if you like to the onion and garlic rue and put back the chicken in your pan. Add your canned tomatoes Add parley Simmer for hour Make your rice last because it take a few minutes to make. Making your plate: Put rice in middle of the plate put chicken and juices on top and enjoy!

A unique twist to your typical beef stir-fry. Instead of beef tips with spicy peppers and onions, this recipe provides us with not only a fair share of vegetables, but a crispy-textured chicken with a delicious multi-layered sauce to garnish them with.

Ingredients
Marinade
1 fl oz. light soy sauce
1 fl oz. sweetened sake
2 Tsp minced garlic
2 Tsp ground white pepper
2 lb chicken thighs, cut into 1 in cubes
32 fl oz. vegetable oil
Coating
1 egg
4 fl oz water
6 oz cornstarch
Prep/Cooking
2 fl oz peanut oil
2 Tsp minced garlic
½ oz thinly sliced green onions
½ oz dried tangerine skin, minced
2 Tsp dried red chiles
8 oz white mushrooms, quartered
8 oz red peppers, diced 1 in. squares
8 oz broccoli florets, blanched
14 fl oz *Sweet Garlic Sauce (below)
*Sweet Garlic Sauce
Makes 32 fl oz
2½ fl oz vegetable oil
2 Tsp minced Ginger
1 oz minced garlic
1¼ oz minced green onions
2 Tsp Tabasco Sauce
6 fl oz light soy sauce
2½-rice wine
2½-rice vinegar
10 fl oz chicken stock
5 oz sugar
2 tsp Sesame oil
3 oz cornstarch and water, to thicken sauce.

Directions
*Sweet Garlic Sauce Procedures
1. Heat the vegetable oil in a wok over medium-high heat. Add the ginger, garlic, and green onions and stir-fry until aromatic, 15 to 30 seconds.
2. Add the Tabasco Sauce and stir-fry for 15 to 30 seconds.
3. Add the soy sauce, rice wine, vinegar, and stock. Bring the mixture to a boil.
4. Stir in the sugar and sesame oil and return to a boil.
5. Gradually add the cornstarch slurry to the sauce until it becomes medium thick. Careful not to over do it.
6. The sauce is now ready for use can be rapidly cooled for later use.

Procedures

1. To make the marinade, simply combine the soy sauce, sweetened sake, garlic, salt and pepper. Pour the mixture over the already cut chicken, and marinate in the refrigerator for 20 minutes.
2. Heat the vegetable oil to 350 degrees F.
3. To make the coating, combine the egg, water, and cornstarch to make a smooth paste. Drain the chicken from the marinade and cover it with the coating mixture.
4. Fry the chicken until it is golden brown, crispy, and cooked throughout. This usually takes about 2-3 minutes. Drain briefly on absorbent paper towels and keep warm.
5. Heat the peanut oil in a wok over medium-high heat. Add the ginger, garlic, green onions, tangerine skin, and chilies and stir-fry until aromatic (15-30 secs).
6. Add the mushrooms and red peppers and stir-fry for 1-2 minutes. Then add the broccoli and stir-fry for 1-2 minutes.
7. Add the fried chicken to the stir-fry only to reheat.
8. Slowly add the sweet garlic sauce stirring constantly to coat chicken and vegetables.
9. Serve immediately.

1 lb. ground beef
1/4 cup chopped white onion
2 cloves chopped garlic
1 lg. can of cream corn
2-3 cups mashed potatoes
2 tablespoons butter

Directions
Brown the ground beef with the onion and garlic and then drain off the excess grease. Put the ground beef mixture onto the bottom of a lightly greased casserole dish and pour the cream corn evenly on top of the beef mixture. Top the cream corn with the mashed potatoes and spread evenly. Dot the top of the mashed potatoes with butter and place in a pre-heated 350 degree oven for 30 minutes. Enjoy!

1 can cream of chicken soup
1 small carton sour cream
1 whole chicken boiled shredded
1 1/2 pkgs. Ritz crackers
1 small carton of sliced fresh mushroms
1 stick of margarine

Directions
Boil Chicken until ready to fall off bone, shred, and place chicken into a casserole dish. Next, place sliced mushrooms on top of chicken and mix in sour cream and cream of chicken soup together over top of mushrooms. Next, melt 1 stick of butter in microwave add 1 1/2 pkgs. of crumbled Ritz crackers. Place this on top of sour cream mixture and spread evenly. Bake at 425 for 30 min. or until golden brown and bubbly. Enjoy!

5 pounds ground beef
1 pound sauage
1/2 medium onion chopped
2 eggs
1/2 box bran cereal
1/2 cup milk

For those who don't like Beef this is a great tasting BBQ alternative!

Ingredients
1 tablespoon butter, cut into pieces
1 small red onion, 1/2 finely chopped
2 cloves garlic, finely chopped
2 tablespoons tomato paste
1 teaspoon sugar
1 tablespoon Worcestershire sauce, eyeball it
1 1/4 pounds ground chicken
1 tablespoons grill seasoning (recommended: McCormick brand) a palm full
Salt and pepper
4 cornmeal Keiser rolls, split

Directions
In a small skillet over medium heat, melt butter. Add chopped onions, garlic and tomato paste and sweat them for 5 minutes to soften and sweeten. Sprinkle in sugar and remove from heat. Cool in a bowl, 5 minutes. Add tomato paste mixture, Worcestershire to bowl and combine. Add chicken to the bowl then grill seasoning and combine the burgers well to evenly distribute the flavors and form 4 patties. Wash up.
Cook patties 6 minutes on each side over medium-high heat

Fresh shrimp with breadcrumbs, parmesan cheese and seasonings.

Ingredients
2/3 cup fine, dry breadcrumbs
1/2 cup of grated Parmesan cheese
1/4 cup of chopped fresh parsley
2 pounds of unpeeled large shrimp
2 teaspoons minced fresh garlic
1/2 teaspoon of seasoned salt
1/2 teaspoon of freshly ground pepper
1/4 cup olive oil

Directions
Combine breadcrumbs, cheese, and parsley in a shallow dish; set aside. Peel shrimp, leaving tails intact, and de-vein, if desired. Place in a large bowl. Sprinkle shrimp with garlic, seasoned salt, and pepper. Drizzle with olive oil; toss gently. Dredge each shrimp in breadcrumb mixture. Arrange shrimp in an even layer in 2 greased 15-x10-inch jellyroll pans. Bake at 400 for 15 to 20 minutes, stirring twice.

Succulent chicken breast cooked in a balsamic sauce with roasted red peppers, portobello mushrooms, and red onions.

Ingredients
4 5oz chicken breasts, fat removed
4 small portobello mushrooms, julienned
1 large roasted red pepper, julienned
1 small red onion, julienned
2 cloves garlic, minced
3 cups balsamic vinegar
1/2 cup white wine (optional)
2 sprigs fresh basil, chopped fine
salt and pepper to taste
cornstartch and water slurry, made using equal amounts of each

Directions
Marinade chicken in 1 cup of balsamic vinegar, 1 clove garlic, and 1 sprig of basil for at least 2 hours. Place chicken and marinade into a large skillet. Cook on medium heat for about 20 -25 minutes until chicken is fully cooked and internal temperature of meat reaches 170F degrees. You can add more vinegar to the chicken during cooking if it absorbs a lot if it. Once chicken is finished cooking you can thicken the liquid left over with the cornstarch slurry. Liquid must be at a boil when adding slurry. While chicken is cooking, in a large sauce pan, add mushrooms, roasted red peppers, red onion, 2 cups balsamic vinegar, 1/2 cup wine, 1 clove garlic, salt and pepper to taste. Let cook on low to medium heat until mushrooms and onions are tender. As with the chicken if the vinegar is absorbed you can add more during cooking. When tender, add cornstarch slurry to thicken sauce. Liquid must be at a boil when adding slurry. Add basil at the end. To serve, place chicken on plate with some sauce. Add mushroom mixture over top with more sauce. This dish is great with rice, mashed potatoes, or roasted red potatoes.

Ingredients
1 lb. ground beef
2/3 cup water
1 packet taco seasoning
1 green pepper, diced
1/4 onion, diced
1 can Mexicorn
1 cup shredded cheese
tortilla chips (optional)
sour cream (optional)
shredded lettuce (optional)
diced tomatoes (optional)

Directions
Brown ground beef in skillet, then add water and taco seasoning and bring to boil. Next, lower heat and simmer 5 to 10 minutes until sauce has thickened. Add green pepper, onions and corn and cook an additional 5 to 10 minutes until vegetables are heated through. Serve topped with shredded cheese. Optional add-ins: Top with crushed tortilla ships. Top with sour cream. Serve over shredded lettuce and diced tomatoes for a quick taco salad

Ingredients
4 medium-sized potatoes, peeled and cubed
1 pound cooked ham, cubed
1 can cream of chicken or mushroom soup
1/2 cup chopped onion
1 soup can milk
1 1/2 cups shredded cheese, your choice
Salt and pepper, to taste

Directions
In medium saucepan, in water to cover, boil potatoes until almost tender. In bowl, mix soup of choice, milk, onion and 1 cup of cheese. In greased 9x13-inch pan, place drained potatoes on bottom and sprinkle ham over potatoes. Spread soup mixture over top. Then sprinkle remaining 1/2 cup cheese over top. Bake in preheated 350-degree oven for 30 minutes.

This is a tasty and easy to prepare grilled vegetable dish.

Ingredients
1 bunch fresh asparagus
1 Tbsp. butter, cubed
1 Tbsp minced garlic
1 pinch of salt

Directions
Rinse asparagus and place in a sheet of aluminum foil. Sprinkle butter, garlic, and salt on top of asparagus. Seal aluminum foil tightly and place on hot grill for 20 minutes, or until asparagus is tender. Do not overcook. Serve as a hot side dish to grilled meats.

Tasty BBQ chicken sandwiches everyone will love.

Ingredients
1 pound Chicken Tenderloins
2 slices fully cooked bacon
1 TBSP vegetable oil
1/2 tsp garlic pepper seasoning
1/2 cup barbecue sauce
1 cup shredded Cheddar salsa blend cheese
8 slices Bakery multi-grain bread

Directions
Preheat large sauté pan 2-3 minutes on medium-high. Cut chicken and bacon into bite-size pieces. Wash hands. Pour oil in pan and swirl to coat. Using tongs add chicken and bacon to pan; sprinkle with garlic pepper and cook 5-6 minutes, stirring often, until chicken reaches an internal temperature of 170F. While chicken cooks, toast bread. Reduce heat to medium; stir barbecue sauce and cheese into chicken mixture. Cook 1-2 minutes, stirring occasionally, until cheese is melted and sauce is smooth. Spoon chicken mixture over half bread slices. Top with remaining bread slices and serve.

Ingredients
1-2 lbs. of fettuccine noodles
i-2 lbs of small shrimp, peeled and divided
1-2 lbs. of crab meat
1-2 lbs. of lobster meat
1-2 jalapeños'
1 jar of Alfredo sauce
1 or 2 tsps. of seafood spice and a little of cayenne pepper

Directions
1. cook your noodles until just al dente' 2. Then just saute' your seafood in a skillet just until brown. 3. Then when the noodles are done, drain them then put back in you saucepan and then add your jalapeños and cayenne and then serve it makes about 4 servings/. You can have a little garlic bread with this and a glass of wine too.

Ingredients
1 large onion, chopped
3 peppers cut in strips (green, yellow & red)
1 box fresh whole mushrooms- chopped
1 box whole wheat or whole grain pasta (cooked according to directions)
1 jar green pesto
2 tbsp. olive oil
1 pkg. cooked grilled chicken strips

Directions
Saute peppers, mushrooms and onions with a couple tbsp. of olive oil until it is reduced in half or less. Then, mix all of the other ingredients and simmer until everything is warm.

A great way to use some of that springtime rhubarb. If using frozen rhubarb, do not thaw before adding to batter. Our Favorite Father's Day dessert!

Ingredients
Cake:
3/4 cup butter
1/2 tsp salt
1 1/2 cups sugar
1 egg
1 tsp vanilla
1 cup buttermilk or milk soured with 1 T lemon juice
2 cups flour
1 tsp baking soda
3 cups chopped rhubarb
Topping:
1/2 cup sugar
1 tsp cinnamon
1 T butter
Ice Cream Sauce:
1 small box of instant vanilla pudding
1/2 cup milk
1 pint of vanilla ice cream

Directions
Cream butter and sugar and salt together. Add egg, and mix well. Stir in vanilla.
Mix flour and baking soda together and add alternately with buttermilk, beating well after each addition. Stir in rhubarb. Pour into greased 9 x 13 cake pan.
Combine sugar, cinnamon and butter together, and sprinkle on top of cake batter.
Bake at 350* for about 45 minutes. Let cake cool before serving.
Serve with Ice Cream Sauce.

To make ice cream sauce, mix pudding mix and milk till blended. Stir in ice cream. Keep in freezer till cake is ready to serve, and stir before serving.

Very lean & tender, easy to make and
also inexpensive. It tastes great and
the leftovers are fantastic!

Ingredients
1 pound of lean bacon
4-5 pound pork tenderloin
1 package 'Stove Top Pork Flavored' stuffing mix
1 can whole kernel (undrained) corn

Directions
First prepare stuffing according to the box directions.
Then, Cut pork tenderloin in half (lengthwise). Cut a
slit almost to the end of each half. Mix stuffing with
undrained whole kernel corn. Place both halves of
tenderloin on bacon on a large cutting board with the
bacon placed slightly 'crosswise' to the tenderloins.
Fill one of the tenderloins with the stuffing and corn
mixture. Note: There will be extra stuffing. Use this
by placing the remainder on each side of the tenderloins
in a large roaster pan. Place the 'unfilled' tenderloin
on top of the 'filled' tenderloin. Wrap the tenderloins
with the bacon. Add one or two remaining pieces of bacon
on top. Place in large roasting pan and put in
approximately 350-375 degree oven(covered)and with meat
thermometer inserted. When meat thermometer indicates
doneness, remove roaster pan from oven and let roast rest
for approximately one-half hour for easier cutting.
Serve with cranberry sauce if desired.

Only 3 ingredients to make this very simple and delicious recipe.

Ingredients
1 fryer(3-4 lbs)
14 oz. Pepsi
1 (14 oz.) bottle Heinz ketchup

Directions
Put raw chicken in an ungreased skillet. Mix the ketchup and Pepsi together. Pour over chicken. Cook uncovered on medium heat until done, about 1 hr. Turn the chicken every 15 min. Sauce thickens as it cools.

You can use any of your favorite chicken pieces for this recipe instead of a fryer. Just as long as you have a large skillet full of chicken. Use your favorite ketchup. Some are sweeter or spicier then others. Depending on your type of ketchup will determine the sweetness or the spiciness of your barbeque flavor.

You thought you tried Salmon every way possible - now try this!

Ingredients
1 1/2 cups Cola (coke or pepsi)
1 1/2 tablespoons balsamic vinegar
1 1/8 teaspoon salt
1/2 cup trimmed pearl onions, par-cooked
1/2 cup bias-cut parsnips, par-cooked
1/2 cup bias-cut carrots, par-cooked
1/4 cup snow peas, strings removed, par-cooked
1 1/4 cups white mushrooms, trimmed and sliced
1 1/4 pounds salmon fillet*, skin-on, portioned 5 ounces each
1/2 tablespoon water 1/2 teaspoon black pepper, freshly ground
1 tablespoon olive oil

Directions
1. Combine the soda, balsamic vinegar and 1/8 teaspoon of salt in a saucepan over medium-high heat and reduce to 1/2 cup, about 20 minutes. Remove from heat.
2. Heat 1 teaspoon olive oil in a large non-stick skillet over medium heat. Add mushrooms, onions, 1/2 tablespoon of water and a pinch of salt. Cook just until tender, about 2-3 minutes. Add remaining vegetables and toss to combine. Remove from heat and hold while cooking fish.
3. Season salmon fillets with remaining salt and pepper. Heat remaining olive oil in a non-stick skillet over medium heat. Place the fillets, flesh-side down into the pan. Sauté until first side is golden brown, about 5-7 minutes. Flip over to skin side. Sauté until fish is opaque, but still tender, about 5 additional minutes. Remove from heat and hold warm.
4. Place the pan with vegetables over medium-high heat and toss to reheat briefly. Serve fillets and mixed vegetables, drizzled with glaze.

Ingredients
1/4 to 1/2 lb. of chipped ham
2 Tbsp. of brown sugar
ketchup (coat the ham)
3 Tbsp. of Cola (pepsi or coke)

Directions
Turn burner to low/med. Put chipped ham in frying pan. Put a little ketchup on it and stir until ham is coated in ketchup. Sprinkle on brown sugar and stir. Add Coca Cola and stir. Heat until ham is warm to hot and serve on a bun. Enjoy!!!!

Ingredients
3 cups of Pepsi
1 cup of Worcestershire Sauce
1/2 cup brown sugar
1 small Onion finely chopped
1-2 TBS. Garlic finely chopped
salt and pepper to taste
2-4 pounds of Flank Steak (Or other meat if choose great for all kinds.)

Directions
Mix the Pepsi and Worcestershire Sauce, add brown sugar and mix, toss in the Onion, and Garlic, Salt and Pepper to taste. Add Flank Steak, and marinade for 4 to 24 hours. The longer you marinade the better the flavor. Roast or Grill to Liking.

This is a true Texas Enchilada.

Ingredients
2lbs ground beef
1 medium onion (finely chopped and divided)
2lbs of Colby/Monterey Jack cheese (grated and divided)
2 16oz. cans of chili (no beans)
24 count package of corn tortillas
1/2 tsp cumin
tsp cilantro
2 tbsp chili powder

Directions
Sauté onion then add the ground beef and seasonings (cumin, cilantro, chili powder), cook till meat is brown. Drain the meat mixture. Put meat mixture in large bowl and add 1/2 of the cheese. Stir until cheese is melted. Microwave 2 corn tortillas 20 seconds, spoon meat and cheese mixture onto the soft tortilla and roll, then place in 9" x 13" baking dish seam side down. Repeat with remaining tortillas. Heat chili on stovetop according to instructions on the can and pour over the tortillas. Sprinkle with remaining onions and cheese. Bake at 400 degrees until cheese is melted and slightly bubbling. Approximately 10 minutes.

A great change to the usual grilled burgers.

Ingredients
• 5 pounds lean ground beef
• 6 tablespoons Worcestershire sauce
• 2 teaspoons hickory seasoning (optional)
• salt and pepper to taste
• 2 cups chopped onion
• 2 cups chopped fresh mushrooms
• 2 cups chopped cooked ham
• 3 cups shredded Cheddar cheese

Directions
1. Preheat a grill for high heat. When the grill is hot, lightly oil the grate.
2. In a large bowl, mix together the ground beef, Worcestershire sauce, hickory seasoning, salt and pepper until well blended. Make 8 or 10 balls, and flatten into patties. On one half of the patties, distribute the onions, mushrooms, ham and cheese. Carefully cover the piles with the remaining patties, making sure to seal all of the edges of the patties together tightly and enclose the filling.
3. Grill the patties for 8 to 10 minutes per side, or until meat is well done, and cheese in the center is melted.

Ingredients
1/2 pound of any meat you choose
1 pouch of the 60 second rice or noodles
onion
bell pepper
mushrooms
squash
zucchini
broccoli
snow pea pods
1 tablespoon of garlic salt
1 teaspoon of pepper
teriyaki or soy sauce

Directions
Chop vegetables up and put them all into one bowl. (As much as you want of those vegetables) Then put the meat into another bowl. Marinade the meat in teriyaki or soy sauce, garlic salt, and pepper. Sauté the vegetables and meat on high for about 10 minutes or until brown. Put over rice or noodles. You can put more teriyaki or soy sauce on after it’s done.

A delicious combination of spices & more.

Ingredients
2 pounds ground beef chuck or sirloin
1 large yellow onion, chopped
6 or more cloves fresh garlic, minced
1 medium bell pepper, chopped
1 bunch of green onions, white blub and half of green tops, chopped
1 large egg
2 TBSP Worcestershire sauce
1 TBSP soy sauce
1/4 tsp hot sauce, such as tabasco
1/4 tsp coarsely ground black pepper
1/4 tsp salt
1/4 tsp dry mustard
1/4 tsp seasoned salt
1/4 tsp dried thyme
1/4 tsp cornstarch
1 TBSP softened cream cheese
1 TBSP dry bread crumbs

Directions
In a large bowl, combine all ingredients. Combine well, by hand, and refrigerate overnight to let flavors intensify. Bake, broil, fry or grill burgers the way you like them, and serve as a main course or in a bun with your favorite garnishes.

Kids love this easy to make dessert!

Ingredients
1 Box of Honey Graham crackers
1 box of instant vanilla pudding
1 box of instant chocolate pudding
2 8oz.tubs of cool whip
1 can of fudge frosting or milk chocolate frosting

Directions
Line the bottom of a 13x9 glass desert dish with graham crackers. (do not crush or press with butter) mix one box of instant vanilla pudding with 1 1/2 cups of milk( I used French Vanilla). Let set. Mix chocolate pudding with 1 1/2 cups of milk let Set. Mix one bowl of cool whip in the vanilla pudding and one bowl of cool whip in the chocolate pudding. Use the vanilla pudding and spread over graham crackers. Now place another layer of graham crackers on top of vanilla pudding. Now spread the chocolate pudding mixed with cool whip on top of that layer of graham crackers. Now place another layer of graham crackers on top and spread fudge frosting over the top layer. I found it easier to put icing on the graham crackers then place on top of pudding covering the top then using the rest of the frosting to cover like icing a cake. Place in the refrigerator at least 4 hours before serving. This recipe tastes a lot like an éclair.

Ingredients
1 lb chicken breast
1 can chicken broth
1 1.25oz taco seasoning
10 in flour tortillas
2 cups Shredded cheddar cheese
green onion chopped (optional)
1 bottle hidden valley Spicy Ranch dressing
Sour cream

Directions
Cook chicken in chicken broth and taco seasoning in pot over medium heat about 20 minutes. Remove chicken from pot and chop or shred. Place tortilla in a pan add chicken,2-3 Tblsp of shredded cheddar, 1 Tblsp green onion,2 Tblsp of dressing to one side of the tortilla. Fold over and grill on both sides. Add sour cream,lettuce or anything you desire. Please enjoy!

Ingredients
1 medium apple, chopped
1 cup, dried apricots, chopped
1/2 cup bread crumbs
1/4 cup celery, finely chopped
2 tablespoons golden raisins
2 tablespoons walnuts, chopped
2 tablespoons scallions, chopped including greens
1/8 teaspoon cardamon
1/8 cup apple cider
12 ounce pork tenderloin, trimmed
1/2 cup apple cider, for sauce
1 1/2 teaspoons cornstarch
1/8 teaspoon ground cinnamon

Directions
Stuffing: Combine the apples, apricots, bread crumbs, celery, raisins, walnuts, scallions and cardamon together. Stir in the apple cider. Set aside.
Butterfly the pork tenderloin: Make a single lengthwise cut down the center of the narrow edge, cutting to within 1/2-inch of the other side. Spread the meat open. At the center of the tenderloin, make one perpendicular slit to the right of the V and one to the left.
Cover the meat with plastic wrap and pound with a meat mallet to 1/2-inch thickness.

Spread the stuffing over the meat. Roll up and tie with string to secure. Brush the meat with apple cider.

In a 350 degree oven, place the meat in a roasting pan, uncovered, and roast for 1 hour or until meat is no longer pink. Baste the meat once after 30 minutes of cooking.

Sauce: In a small saucepan, combine the apple cider, cornstarch and cinnamon. Cook and stir until thickened and bubbling, cook and stir 2 minutes more.

Serve 2 one-inch slices with the sauce over top.

This is a delicious baked chicken dish that you can vary depending on the kind of chicken you have on hand. I loved the prep and baking time. The flavors were incredible as well as the moistness of the chicken. Recommend it to anyone who needs a good healthy, sweet and tart chicken recipe.

Ingredients
1 whole chicken cut into pieces or 3-4 split chicken breasts
1/4 cup of butter or margarine
1/2 cup of honey
1/4 cup of spicy brown mustard
1 tsp salt
1 1/2 tsp of curry powder

Directions
Preheat the oven at 350 degrees. Place chicken in a baking dish (glass or metal) with skin side up. Combine butter/margarine, honey, mustard, salt, and curry in a bowl and pour over chicken.

Cover chicken with foil and bake for 30 minutes. Remove cover and continue baking for 45 minutes (whole chicken) 30 minutes chicken breasts) basting every 15 minutes until the chicken is brown.

Ingredients
2 lb. ground beef
1 can sliced mushrooms
1/2 c. chopped green bell pepper
1/2 c. chopped onions
1 jar of beef gravy
salt and pepper to taste
4 hamburger buns
cheese of your choice (optional)

Directions
Brown ground beef, drain. Set aside. Saute' bell pepper,onion and mushrooms in a lightly oiled skillet. Mix ground beef with the bell pepper,onions and mushrooms. Pour the jar of beef gravy in with the beef mixture. Add the salt & pepper. Simmer til bubbly. Remove from heat. Serve on hamburger buns. Enjoy!

Wonderful salad large enough to feed a crowd. You'll be amazed at the flavor!

Ingredients
1 large head of lettuce
1 large bag of chili cheese Frito's
1 large onion
2 tomatoes
2 cans of chili "beans"
1 large bag of shredded mixed Mexican cheese
1 large bottle Ranch dressing

Directions
You will need a very large bowl for this. Pinch off lettuce, lightly crunch Frito's, drain beans leaving just a little juice in bottom and add all this to the bowl. Dice the onion and tomato's and add along with the cheese and Ranch dressing. Take tongs and toss thoroughly. Enjoy my salad!
