Description
This is a Mexican style dish that's tasty and easy to prepare!
Ingredients
1 24pkg. corn tortillas
2 Lbs. shredded sharp cheddar
1/2 Lbs. jack cheese
1 16oz.cont. sour cream
1 large onion diced (med.)
1 bunch chopped green onion
1 red bell pepper diced
3 Lbs. chicken
2T. chicken base
4c. picante sauce (med/hot)
1/4c.chili powder
1/2c.ground cumin
1/4c.granulated garlic
2T. salt
2T. pepper
Oil to cover baking pan
1 large casserole dish
2 sheets of plastic wrap
2 sheets of foil
Directions
Season chicken w/ chili powder, garlic, cumin, salt, and pepper. Place on a cookie sheet and put in oven. Bake at 350 degrees till done. Remove and let cool, when cooled cut into pieces small to fit into food processor. Pulse to shred not ground. Add chicken base, 1c. picante sauce, onions, bell pepper and mix well. Lightly oil casserole dish, layer bottom w/ tortillas over lapping to cover bottom. Top w/ chicken, hot sauce and cheese, place another layer of tortillas on top over lapping to cover, and gently press down repeat prior steps till dish is full. Top w/ remaining sauce and cover w/ remaining cheese. Cover w/ plastic 2 times, 1 time w/ foil bake in oven at 350 degrees for 35min. remove, unwrap and place back in oven to brown cheese. Cut into 9 equal servings. Serve w/ sour scream Note: use as much hot sauce as u like between layers saving enough to top off and finish before wrapping!
