Description
A rich & tasty dish that is great served hot or cold.
Ingredients
8 - 10 Strips of bacon
1 Onion (Medium) diced
1 Bell pepper diced
2 Fresh roasted (or 1 small can) green chilies
2 Packages cream cheese (8 - 10 oz)
3 Ounces shredded cheddar cheese
5 Cans of whole kernel corn
sprinkle of Paprika for top
Directions
Drain 5 cans of whole kernel corn and pour into a large baking pan or casserole dish. Cut bacon into small pieces and fry until crisp. Add chopped/diced onion, bell pepper and green chilies to the bacon and sauté until soft. Add the cream cheese to the mixture and stir until melted and blended in well. Blend the cream cheese/sautéed veggies with the corn until mixed well. Bake at 350 for 30 minutes. Stir the casserole and add a thin layer of shredded cheddar cheese to the top. Sprinkle paprika across the top and bake an additional 5 minutes.
