Description
Light and creamy lemon bars that melt in your mouth.
Ingredients
Crust:
2 cups flour
1/2 cup confectioners' sugar
1/2 teaspoon salt
1 cup butter
Lemon topping:
4 eggs
2 cups sugar
4 tablespoons flour
4 tablespoons lemon juice
Confectioners' sugar for dusting
Directions
For the crust: In a food processor, blend all ingredients until it is crumbly dough. Pat dough into a 9 x 13 pan. Bake at 350° for 15 minutes. For the topping: In a mixing bowl, beat the sugar and eggs until blended. Stir in flour and lemon juice. Pour mixture evenly over the crust and bake at 350° for 20 minutes or until set. Sprinkle with confectioners' sugar and cool.
