American Westridge Scramble

Description

A delicious open bagel breakfast sandwich.

Ingredients
1 lb pan sausage
1 med onion
4 Roma tomatoes
4 jalapeño peppers (remove seeds)
1 small eggplant
4 tbsp extra vergin olive oil
4 bagels
salt and pepper to taste

Directions
Chop onions, tomatoes, jalapeños, and eggplant. This should be about 1/2 to 1 cup of each ingredient. (depending on your taste) Set these aside. Then in a skillet scramble sausage and drain set aside. Now heat extra virgin olive oil in skillet and sautee onions, jalepenos, and eggplant until onions are done. Then add sausage back in pan scramble together. Let this cook on low for about 5-10 min. Stir frequently to keep from burning. (Cut bagels in half and butter, place in oven on broil to toast bagels.) Add tomatoes to mixture in skillet for 2-3 min. Serve on top of open bagel with your favorite salsa. We generally serve with Cheesy scrambled eggs on the side. Depending on your taste we sometimes have 2 lbs of sausage for a hearty breakfast.
