Chicken Quesadilla Burger

These are delicious and easy. My hubby and kids love them.

Ingredients
1 lb chicken breast
1 can chicken broth
1 1.25oz taco seasoning
10 in flour tortillas
2 cups Shredded cheddar cheese
green onion chopped (optional)
1 bottle hidden valley Spicy Ranch dressing
Sour cream

Directions
Cook chicken in chicken broth and taco seasoning in pot over medium heat about 20 minutes. Remove chicken from pot and chop or shred. Place tortilla in a pan add chicken,2-3 Tblsp of shredded cheddar, 1 Tblsp green onion,2 Tblsp of dressing to one side of the tortilla. Fold over and grill on both sides. Add sour cream,lettuce or anything you desire. Please enjoy!

Ingredients
1 medium apple, chopped
1 cup, dried apricots, chopped
1/2 cup bread crumbs
1/4 cup celery, finely chopped
2 tablespoons golden raisins
2 tablespoons walnuts, chopped
2 tablespoons scallions, chopped including greens
1/8 teaspoon cardamon
1/8 cup apple cider
12 ounce pork tenderloin, trimmed
1/2 cup apple cider, for sauce
1 1/2 teaspoons cornstarch
1/8 teaspoon ground cinnamon

Directions
Stuffing: Combine the apples, apricots, bread crumbs, celery, raisins, walnuts, scallions and cardamon together. Stir in the apple cider. Set aside.
Butterfly the pork tenderloin: Make a single lengthwise cut down the center of the narrow edge, cutting to within 1/2-inch of the other side. Spread the meat open. At the center of the tenderloin, make one perpendicular slit to the right of the V and one to the left.
Cover the meat with plastic wrap and pound with a meat mallet to 1/2-inch thickness.

Spread the stuffing over the meat. Roll up and tie with string to secure. Brush the meat with apple cider.

In a 350 degree oven, place the meat in a roasting pan, uncovered, and roast for 1 hour or until meat is no longer pink. Baste the meat once after 30 minutes of cooking.

Sauce: In a small saucepan, combine the apple cider, cornstarch and cinnamon. Cook and stir until thickened and bubbling, cook and stir 2 minutes more.

Serve 2 one-inch slices with the sauce over top.

This is a delicious baked chicken dish that you can vary depending on the kind of chicken you have on hand. I loved the prep and baking time. The flavors were incredible as well as the moistness of the chicken. Recommend it to anyone who needs a good healthy, sweet and tart chicken recipe.

Ingredients
1 whole chicken cut into pieces or 3-4 split chicken breasts
1/4 cup of butter or margarine
1/2 cup of honey
1/4 cup of spicy brown mustard
1 tsp salt
1 1/2 tsp of curry powder

Directions
Preheat the oven at 350 degrees. Place chicken in a baking dish (glass or metal) with skin side up. Combine butter/margarine, honey, mustard, salt, and curry in a bowl and pour over chicken.

Cover chicken with foil and bake for 30 minutes. Remove cover and continue baking for 45 minutes (whole chicken) 30 minutes chicken breasts) basting every 15 minutes until the chicken is brown.

Delicious sloppy joes with a country twist.

Ingredients
2 lb. ground beef
1 can sliced mushrooms
1/2 c. chopped green bell pepper
1/2 c. chopped onions
1 jar of beef gravy
salt and pepper to taste
4 hamburger buns
cheese of your choice (optional)

Directions
Brown ground beef, drain. Set aside. Saute' bell pepper,onion and mushrooms in a lightly oiled skillet. Mix ground beef with the bell pepper,onions and mushrooms. Pour the jar of beef gravy in with the beef mixture. Add the salt & pepper. Simmer til bubbly. Remove from heat. Serve on hamburger buns. Enjoy!

Wonderful salad large enough to feed a crowd. You'll be amazed at the flavor!

Ingredients
1 large head of lettuce
1 large bag of chili cheese Frito's
1 large onion
2 tomatoes
2 cans of chili "beans"
1 large bag of shredded mixed Mexican cheese
1 large bottle Ranch dressing

Directions
You will need a very large bowl for this. Pinch off lettuce, lightly crunch Frito's, drain beans leaving just a little juice in bottom and add all this to the bowl. Dice the onion and tomato's and add along with the cheese and Ranch dressing. Take tongs and toss thoroughly. Enjoy my salad!

This is a nice, quick and healthy meal everyone will enjoy!

Ingredients
1 lb. pre-cooked seasoned turkey meat
8 oz. cream cheese (low fat)
3 stalks celery
1/2 yellow onion
1/2 cup mayonnaise (low fat)
salt to taste
pepper to taste
6 pita pockets
shredded lettuce or alfalfa sprouts

Directions
Clean and pat dry celery and onion, and then dice up. Throw these and cream cheese into a mixing bowl, mixing on low speed until everything is well combined. Next, add mayonnaise and mix until blended in. Now, dice turkey into small pieces and stir into bowl along with other ingredients, adding salt and pepper to taste. Next, cut pita pockets in half. Spoon in turkey salad on the bottom of the pita and stuff lettuce or sprouts on top of turkey salad. Enjoy this wonderful little meal.

Ingredients
1. Chicken (white/dark or mix)
2. Rigatoni pasta noodles (large)
3. Canned Ro-tel chili tomatoes

Directions
Boil chicken until done, at the same time boil the pasta. When pasta is done, drain and add chicken . Combine cream of chicken soup, Ro-tel chili tomatoes, shrimp, broccoli florets with the cooked pasta and chicken. Use seasonings (Rosemary, Tony Chachere's and Basil) to taste. Stir and let simmer. Serve with Garlic Bread and Salad of choice.

Ingredients
2 cloves of garlic
1/2 stick of butter
1 family size pkg. of tortellini
4 zucchinis
1 fresh pkg. of mushrooms (sliced)
1 can of quartered artichoke hearts (sliced)
1 pint half and half
2 cups Parmesan cheese

Directions
Crush and dice garlic and sauté in butter/olive oil until slightly brown in skillet. Slice zucchinis and add them with the mushrooms and garlic in skillet. Let veggies cook for a few minutes then add the artichoke hearts. While vegetables are sautéing, boil water for pasta and cook for about 5-8 minutes. Once pasta has cooked, drain fold into vegetables. Gradually add parmesan and half and half until cheese has a stringy effect. You do not have to use the whole pint. Enjoy!

Ingredients
1 pound hamburger
1 small can cheese soup
1 can sloppy joes
1 tomato, diced and chopped
1 head lettuce and
1/2 block of cheese, grated
1 avocado, peeled chopped
1 pint sour cream
rice, enough servings per family members

Directions
Put hamburger in a cooking pan on the stove and cook. When the hamburger is done, put the sloppy joes in and heat it up. Cook enough rice for one serving per family member. When the rice is done, take a small sauce pan and the can of soup and heat it on medium heat with a little less than a half can of milk. Mix it well until it is thickened. Turn off the heat. Put a serving of rice on plates and then the sloppy joes and then the cheese soup. Top with lettuce and the avocado and eat! You can put cheese on it if you like a lot of cheese.

1 small package Pepperidge Farms herb seasoned mix

Directions
Preheat oven to 350. Spray 11x8" pan with cooking spray. Lay chicken breasts in pan and season with pepper and very little salt (the soup has plenty of sodium in it). Top with swiss cheese and then undiluted soup. Combine herb seasoned mix with melted butter and sprinkle on top of soup. Bake for 1 hour. Serve with rice or mashed potatoes, salad and bread of choice.

Hamburger Dish for Picky Kids

Ingredients
1 large roll of Crescent Rolls
1 small roll of Crescent Rolls
One Large Egg, beaten
1 cup shredded cheddar cheese
1 can french style green beans, drained
1 small can tomato sauce
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/2 tsp Italian Seasonings
1 lb ground chuck

Directions
Take both cans of Crescent Rolls and separate each roll. Take a pie plate and layer each roll from the top of plate down using the largest part of the roll at the top. As you go you are forming a piecrust with the rolls and you should pinch together as you go. You may have one or two rolls remaining that you will not need to use, but can separate and piece in where needed. DO NOT take all rolls and try to roll out as one piece because it does not work as well.
Next, take a medium skillet and brown the ground chuck and drain off grease if any. Take the small can of tomato sauce and pour into meat mixture. Next add drained can of french style green beans, pepper, salt, garlic power and Italian Seasonings. Stir all together and simmer on medium for 5-10 min while you are finishing up piecrust.
Take piecrust you made of crescent rolls and pour the beaten egg in pan. Use a paper towel or a small pastry brush and spread egg on bottom of uncooked crust and all edges. Then take 1/2 cup of shredded cheddar cheese and spread on bottom of piecrust.
Next, take skillet meat mixture and pour into piecrust. Spread until all is smooth and bake at 350 for approximately 20-25 minutes. You should be cooking until meat mixture starts bubbling and the crust is golden brown. Remove from oven and take remaining 1/2 cup of shredded cheddar cheese and sprinkle on top of cooked pie and it will melt while cooling. Enjoy.

1 Can of Diced green Chillies
1 can of tomato soup

Place beef and onions in large pot. Brown beef and season to your liking. Drain off oil and add all 3 cans. (may add a little water if too thick)Cut or tear tortillas in pieces and add to mixture. Let simmer till tortillas are softened to your liking. Turn heat to low, add cheese and olives to the top, cover, and let cheese melt. Serve when cheese is melted. If you'd like to double, just simply add one of everything. Leftovers are awesome too!

A really hearty version of a broccoli cheese soup. My kids love it.

Ingredients
2 cups of cooked, cubed ham
6-7 potatoes, cubed
2 small carrots, grated
1 small onion, chopped
16 oz. bag frozen broccoli (can use fresh, also)
1 lb. Velveeta cheese, cubed
8 cups of water w/ chicken boullion (or chicken broth)
2 tsps. garlic
herbs to taste:
bay leaf, savory, thyme, dill, salt, pepper
6 Tbs. butter
1/4 cup flour
1/4 cup dry creamer
2 cups milk

Directions
Add ham, vegetables, herbs, garlic, onions, water & bouillon (or broth) to a pot, cooking until vegetables are tender. In another pan, melt butter and to it, add flour, stirring constantly until smooth. Next, add creamer and milk alternately, stirring constantly. Finally, add Velveeta and stir until melted. Pour this into the pot with the ham and veggies and mix well. Enjoy!

1 (24 oz.) package of O' Brian frozen hashbrown potatoes

1 package of No Fat Pioneer gravy mix

Description

Corn tortillas layered with seasoned beef, enchilada sauce and Mexican cheese.

Ingredients
2 lbs. ground beef
2 packets taco seasoning
15-20 corn tortillas
2 19 oz. cans of enchilada sauce
4 cups of mexican blend cheese
2 3.8 oz. cans black olives

Directions
Brown hamburger and add packets of taco seasoning, following directions on the back of the packets. Set aside. Preheat oven to 350 degrees. In a 13x9" pan drizzle enchilada sauce to cover the bottom of pan, then tear corn tortillas into fourths and cover the bottom of the pan with them; then cover the tortillas with seasoned ground beef, 1/4 c. enchilada sauce and with cheese (in that order.) Layer until you get to the top of the pan. Next, top the dish with corn tortillas, enchilada sauce, cheese, and black olives. Put pan into a preheated oven for 15-20 minutes. Cut into squares and serve. Serves 10-12.

Barbecue pork chops with potatoes and onions is delicious and easy to make.

Ingredients
4 pork chops
1 half bottle of Spicy or Mild Barbecue Sauce
8 Large potatoes cut up
2 medium onions diced

Directions
In a large baking dish put pork chops in a single layer. Then cut potatoes into slices. Put all of the potatoes around the pork chops. Slice onions and put in with the pork and potatoes. Pour all of the barbecue sauce on the top. Bake at 375 degrees for 45 minutes or until pork chops are done and vegetables are tender. You can also add some carrots with the pork chops and onions if you would like. Serves 4

You must try this incredible shrimp recipe, you will love it!

Ingredients
2 garlic cloves, minced
2 T. butter or margarine
2 lbs. uncooked med. shrimp, peeled
1/2 c. white wine or chicken broth
2 (8 oz.) c. shredded Monterey Jack cheese
2 T. minced fresh parsley

Directions
In a skillet over medium heat, sauté garlic in butter for 1 minute. Add shrimp and cook for 4-5 minutes or until pink. Using slotted spoon, transfer shrimp to a greased 11x7x2" baking dish; set aside and keep warm. Add wine or broth to the skillet and bring to boil. Cook and stir for 5 minutes or until sauce is reduced. Pour liquid over shrimp and top with cheese and parsley. Bake, uncovered, at 350 degrees for 10 minutes or until cheese is melted. Enjoy!

A mix between tacos and chili.

Ingredients
1 pound ground beef
1 can black beans
1 can pinto beans
1 can chili beans
1 can diced tomatoes
1 can whole kernel corn
1 chopped onion
1 package taco seasoning mix

Directions
Brown ground beef and drain. Drain the black beans and pinto beans. Combine all ingredients in large pot and cook on medium heat for 30 minutes. Serve with tortilla chips.

Ingredients
2 8 oz cream cheese
1 small jar Hellman's Real Mayo
1 large jar Ortega Thick & Smooth Taco Sauce (Medium Heat)
1 medium onion (your preference)
1 head lettuce
grape tomatoes to your liking
1 package sharp shredded cheddar cheese
1 bag of tortilla chips (or Doritos)

Directions
Soften cream cheese and mix with the mayo until fairly smooth. Spread evenly onto a serving platter or cookie sheet. Pour taco sauce onto the cream cheese mixture and spread evenly. Chop onion and spread evenly, add shredded lettuce, cheese and tomatoes. Use tortilla chips or Doritos to scoop and enjoy!

This is a great taco recipe that is very satisfying.

Ingredients
2 lb. Ground beef browned
2 packs favorite taco seasoning mix
1 package of Mexican cheese
1 box (2 soft packages) four cheese mashed potatoes

Directions
Cook ground beef and add taco seasoning per package directions. Put in 9 x 13 baking pan. Cover with layer of cheese. Make potatoes per package directions, put on top of cheese. Bake at 325F for 20 minutes until warm and cheese melted. This is great for covered dish dinners or my family loves it, even my husband who doesn't like tacos.

Taco in a jumbo pasta shell.

Ingredients
1 box jumbo pasta shells
2 pounds ground beef or ground turkey
2 packages taco seasoning packet
2 cups mozzarella cheese
2 cups Monterey jack cheese
4 oz (half a block) cream cheese

Directions
Cook your shells according to package. Brown the meat cooking thoroughly. Drain juices then add seasoning packets and the water as instructed on the package. Then add 1 cup of mozzarella, Monterey jack and the cream cheese. Heat slowly to melt all the cheese. Fill shells and place in a 13x9 pan. Cook for 20 minutes at 350F degrees, then top with remaining cheese and taco sauce and cook until melted. Enjoy.

Quick breakfast dish

Ingredients
6 eggs
6 slices American cheese
1/4 cup milk
6 slices bread
1 package bacon, cooked and crumbled

Directions
Spray a casserole dish with nonstick cooking spray. Crumble bread into pieces and line the bottom of the dish with the bread. In a mixing bowl, mix eggs, broken up cheese, milk and cooked bacon. Pour mixture over bread. Make sure all the bread is wet and bake at 350 degrees for about 15- 20 minutes or until firm. You can put ham or sausage in place of bacon. Use more or less ingredients to feed the amount of people. Feeds a family of 2 adults and 4 children as it is. Uses very little ingredients to feed and fill up more people than if you just cooked one egg and one piece of toast for each person. Put in mushrooms or any other favorite omelet ingredients. Quick, easy and affordable. Enjoy!

This is a tasty dish your family will love!

Ingredients
1 can diced Italian tomatoes
1 med. diced onion
2-3 zucchini or 4 yellow summer squash - sliced
4 large mushrooms sliced - optional
1 small can sliced ripe olives, drained - optional
10-12 eggs
2 cups cooked rice - for added flavor - I prefer 1 pkg. of Mahatma’s yellow rice
salt & pepper to taste
Asiago or Romano shredded cheese to top casserole

Directions
Heat oven to 350 degrees. While this is heating, cook Rice according to package directions, then sauté onions, zucchini or summer squash & mushrooms in olive oil, until soft/tender; season with salt and pepper to your liking. Next, add tomatoes & olives & heat approx. 5 min more. In a bowl, beat eggs well and mix in vegetables and rice. Pour this into a greased baking pan (e.g. 9x15 corning ware dish), and then generously sprinkle cheese on top. Bake approx 35-45 minutes - checking after 35 min. Top should be a golden brown when casserole is done.

Ingredients
1 corn or flour tortilla
3 eggs or 1 cup of egg substitute
2-3 ounce pork sausage
1 tbsp butter or nonstick cooking spray

Directions
In a pan, place a tablespoon of butter or spray with a nonstick cooking spray. Mold a fist-sized sausage into a patty. Place the patty onto a plate and form it into small balls. Drop them into the pan and fry until fully cooked. Crack three eggs and whisk into a bowl or measure a cup of egg whites. Pour the egg contents directly into the pan. Add 1/2 cup of shredded or grated cheese, if preferred. For tortilla(s), heat in the microwave for no more than fifteen seconds. You may want to butter the tortilla, either with margarine or butter spray. Once cooked, remove sausage-egg mix out of the pan and place it on top of tortilla. Sprinkle salt, pepper, garlic powder or onion powder for taste. This protein-packed meal is perfect for breakfast, lunch, or dinner!

1 pkg egg roll wraps
3/4 lb. ground beef
1/4 lb. ground pork
1 pkg chili seasoning
1 lb. velveta cheese
1 lb. chedder cheese
green chili strips (whole green chili) (add to your liking)

Directions
Cook beef and pork and drain well. Add chili seasoning and Velveeta to meat and mix till melted. Place beef mixture on egg roll, along with a slice of cheddar cheese and a green chili strip. Next, roll egg roll and deep fry until golden brown. These taste great with sour cream, chopped tomatoes or salsa.

12 OZ. COOL WHIP

POUR REMAINDER OF MIXTURE OVER CRACKERS. MELT APPROXIMATELY 2 TABLESPOONS OF ICING AND DRIZZLE. MELT MORE CHOCOLATE AND PUT ON TOP IF YOU WANT.

Ingredients
1 Box Vanilla Wafers Crushed
1 stick butter melted
2 8 oz Pkgs Low Fat Cream Cheese, softened
1 can Low Fat Eagle Brand Sweeted Condensed Milk
Small container of Cool Whip, thawed
Zest of 1 lime & 1 lemon
1/4 cup lime juice
1/4 cup lemon juice
1/4 cup sugar

Directions
Combine crushed cookies and melted butter, press in 9x11 dish until bottom of dish is covered. Beat cream cheese, condensed milk, juice, sugar, lime & lemon zest until smooth. Fold in half the container of cool whip. Spread mixture over cookie crust, then frost with cool whip. Refrigerate for at least 2 hours. Add bug shaped graham crackers or lemon/lime candies to top of cake for garnish.

This is a mild to spicy bean soup (you decide how spicy you want it) that you can put together in 30 minutes or less and has great flavor. I makes a family size recipe that you can enjoy as a great meal and use the leftovers for lunch!

Ingredients
1 large jar Northern Beans
1 large jar mixed beans
2 large cans white chicken breast drained
2 cans diced tomatoes with onions
1 can diced tomatoes with mild green chili peppers
1 can chicken broth
1 large jar salsa with black beans and corn, mild, medium or spicy
1 cup sour cream or 1 can cream of chicken soup

Directions
Use a large soup kettle or pan. Open the cans and jars and pour all into the soup kettle. Make sure to drain the canned chicken breast. Stir and season with salt and pepper as desired. Heat thoroughly. Great with tortilla chips and you may serve with a dot of sour cream on top. Living in southern Michigan we love this on a cold winter day. It has become our favorite over traditional chili.

Chicken tacos that make your mouth water!

Ingredients
3-4boneless skinless chicken breast
2 cans tomato juice or tomato of choice
chopped bell pepper (as much as you like)
chopped onion (as much as you like)
creole seasoning (to taste)
crushed red pepper (to taste)
water
tortilla shells
toppigs of choice (lettuce, tomato, cheese, etc.)

Directions
Put chicken, both cans of tomato juice, pepper, onion, and enough water to cover chicken breasts in a large pot, boil on high heat until chicken is done. (app. 25 min) When chicken is cooked thoroughly, use two forks to shred it. Put shredded chicken in a frying pan along with enough of the liquid from the pot to simmer the chicken, Creole and crushed red pepper. (Adding the pepper and onion from the pot is optional.) Simmer for about 15 min. Prepare like you would a taco on tortilla shell. And enjoy!
