A zesty and fruity blend of flavors that may be a hit even with those who usually don't like salmon.
Ingredients
2 salmon filets
1 cup orange juice
1-3 kiwi fruits (as many as you want)
Apricot preserves (Apricot Pineapple Preserves may be used for a different flavor)
Mint leaves dried or fresh to garnish
Cajun's choice blackened seasoning
Directions
Preheat oven to 350F degrees. Rinse salmon fillets in warm water and pat dry. Place the fillets in a glass baking dish. Then spread some apricot spread (as much as you like) over the fillets. Pour orange juice over the fillets. Sprinkle the blackened seasoning to taste. Put it in the oven. Cook until the fish is tender and more whitish in color, time depends on oven. Near the end of the cooking time, peel kiwis and slice them as you might slice a lemon, and put the slices on the fillets. Take out of the oven. Plate fish. Add the mint garnish if desired. Serves as many as four if the fillets are large size. You can use steaks as well but the fillets seem to be easier.
