Description
This is a true Texas Enchilada.
Ingredients
2lbs ground beef
1 medium onion (finely chopped and divided)
2lbs of Colby/Monterey Jack cheese (grated and divided)
2 16oz. cans of chili (no beans)
24 count package of corn tortillas
1/2 tsp cumin
tsp cilantro
2 tbsp chili powder
Directions
Sauté onion then add the ground beef and seasonings (cumin, cilantro, chili powder), cook till meat is brown. Drain the meat mixture. Put meat mixture in large bowl and add 1/2 of the cheese. Stir until cheese is melted. Microwave 2 corn tortillas 20 seconds, spoon meat and cheese mixture onto the soft tortilla and roll, then place in 9" x 13" baking dish seam side down. Repeat with remaining tortillas. Heat chili on stovetop according to instructions on the can and pour over the tortillas. Sprinkle with remaining onions and cheese. Bake at 400 degrees until cheese is melted and slightly bubbling. Approximately 10 minutes.
