To treat your Portuguese friends with this rice and chicken dish!!!!
Ingredients
8 Boneless Pieces of Chicken
3 Tbsp. Oil
1 White Onion
Few cloves of garlic
2 Tbsp. Flour
1 Cup Chicken Stock (half chicken stock and half wine if you like)
28oz Canned Tomatoes, Diced
2 Tbsp. Parley (fresh or dried)
6 Cups of Rice
Directions
Its very simple directions.... Brown chicken in the 3 tbsp. oil until you get a nice golden color. Remove chicken from your pan when it has reached its color and put them on a plate, do not worry we are not done with them as of yet. Then add your onions and garlic to the same pan you used for the chicken, once the onions and garlic seem to look clear; then add your 2 tbsp. of flour to make something called (rue). If your rue looks a bit dry add a 1 tsp of water it should look like a paste. Add chicken stock or half and half wine if you like to the onion and garlic rue and put back the chicken in your pan. Add your canned tomatoes Add parley Simmer for hour Make your rice last because it take a few minutes to make. Making your plate: Put rice in middle of the plate put chicken and juices on top and enjoy!
