Tortellini With Veggies

Description

A delicious pasta dish everyone will love.

Ingredients
2 cloves of garlic
1/2 stick of butter
1 family size pkg. of tortellini
4 zucchinis
1 fresh pkg. of mushrooms (sliced)
1 can of quartered artichoke hearts (sliced)
1 pint half and half
2 cups Parmesan cheese

Directions
Crush and dice garlic and sauté in butter/olive oil until slightly brown in skillet. Slice zucchinis and add them with the mushrooms and garlic in skillet. Let veggies cook for a few minutes then add the artichoke hearts. While vegetables are sautéing, boil water for pasta and cook for about 5-8 minutes. Once pasta has cooked, drain fold into vegetables. Gradually add parmesan and half and half until cheese has a stringy effect. You do not have to use the whole pint. Enjoy!

Description

A really hearty version of a broccoli cheese soup. My kids love it.

Ingredients
2 cups of cooked, cubed ham
6-7 potatoes, cubed
2 small carrots, grated
1 small onion, chopped
16 oz. bag frozen broccoli (can use fresh, also)
1 lb. Velveeta cheese, cubed
8 cups of water w/ chicken boullion (or chicken broth)
2 tsps. garlic
herbs to taste:
bay leaf, savory, thyme, dill, salt, pepper
6 Tbs. butter
1/4 cup flour
1/4 cup dry creamer
2 cups milk

Directions
Add ham, vegetables, herbs, garlic, onions, water & bouillon (or broth) to a pot, cooking until vegetables are tender. In another pan, melt butter and to it, add flour, stirring constantly until smooth. Next, add creamer and milk alternately, stirring constantly. Finally, add Velveeta and stir until melted. Pour this into the pot with the ham and veggies and mix well. Enjoy!

You must try this incredible shrimp recipe, you will love it!

Ingredients
2 garlic cloves, minced
2 T. butter or margarine
2 lbs. uncooked med. shrimp, peeled
1/2 c. white wine or chicken broth
2 (8 oz.) c. shredded Monterey Jack cheese
2 T. minced fresh parsley

Directions
In a skillet over medium heat, sauté garlic in butter for 1 minute. Add shrimp and cook for 4-5 minutes or until pink. Using slotted spoon, transfer shrimp to a greased 11x7x2" baking dish; set aside and keep warm. Add wine or broth to the skillet and bring to boil. Cook and stir for 5 minutes or until sauce is reduced. Pour liquid over shrimp and top with cheese and parsley. Bake, uncovered, at 350 degrees for 10 minutes or until cheese is melted. Enjoy!

A delicious comfort meal you will love.

Ingredients
1 pound ground Turkey
1 small onion ,chopped fine
1 clove chopped garlic
1 egg
1 slice white bread soaked in milk
salt and pepper to taste
Olive oil

Directions
Soak bread in milk. Usually, 1 day old bread works best. Squeeze the milk out of the bread. Add to turkey with all the other ingredients and hand mix. Form hamburger patties. I like to leave them thick. Fry them up in olive oil, until nice and brown on a medium heat (approx 25-30 minutes). I like to serve with boiled potatoes seasoned with parsley and some fresh cucumber and sour cream salad.. yumm!

A scrumptious new & easy way to prepare corn on the cob!

Ingredients
Mayonnaise (I prefer Best Foods)
Garlic Salt, pepper and chili powder evenly sprinkled over corn
Cheese (shredded Parmesan,cheddar)

Directions
Gather fresh ears of corn on the cob, husk the corn, pull off the silky threads, and cut out any blemishes with a pointed knife. Then using a pastry brush, smear all sides with mayonnaise to coat. Sprinkle garlic salt, black pepper and chili powder on all sides. Lightly cover the corn with shredded Parmesan or cheese of your choice. Roll in tin foil and place on top rack of BBQ and roast for 10 to 15 minutes.

Ingredients
1lb tortellini
3/4 lb zuchini
3/4 lb ham
3/4 lb tomato
12 green onions
1 cup miracle whip
1 cup sour cream
3 gloves garlic minced
3 tbs milk
2 tbs vinegar
fresh ground pepper
20 leafs fresh basil

Directions
step 1: cook tortellini in salt and oil water as long as packet says
step 2: dice next four ingredients
step 3: mix next seven ingredients
step 4: mix step 1-3 and let sit for 1h bevore serving best if longer

For those who don't like Beef this is a great tasting BBQ alternative!

Ingredients
1 tablespoon butter, cut into pieces
1 small red onion, 1/2 finely chopped
2 cloves garlic, finely chopped
2 tablespoons tomato paste
1 teaspoon sugar
1 tablespoon Worcestershire sauce, eyeball it
1 1/4 pounds ground chicken
1 tablespoons grill seasoning (recommended: McCormick brand) a palm full
Salt and pepper
4 cornmeal Keiser rolls, split

Directions
In a small skillet over medium heat, melt butter. Add chopped onions, garlic and tomato paste and sweat them for 5 minutes to soften and sweeten. Sprinkle in sugar and remove from heat. Cool in a bowl, 5 minutes. Add tomato paste mixture, Worcestershire to bowl and combine. Add chicken to the bowl then grill seasoning and combine the burgers well to evenly distribute the flavors and form 4 patties. Wash up.
Cook patties 6 minutes on each side over medium-high heat

Description

A simple and easy way to fix mashed potatoes for those of us that cant have dairy.

Ingredients
4-5 lg. Potatoes
chicken or beef bouillon or broth (set aside 1/4 of the broth after cooking the potatoes)
garlic salt (to taste)
black pepper (to taste)
1 teaspoon minced onion flacks
1-2 tablespoons of butter
2-3 slices of thick bacon

Directions
Cut the potatoes into 1/2 inch pieces. Put the potatoes into water with the chicken or beef broth and cook until soft. Set aside 1/4 cup of broth after the potatoes are done. Cut and cook bacon until crispy. Drain and set aside until cool then crumble. In a large mixing bowl add the potatoes, butter, garlic salt, black pepper, onion flakes and add in the broth as needed to make smooth. Mix until desired texture. Fold in the bacon just before serving.

Ingredients
10 CLOVES OF GARLIC MINCED
1 SHALLOT MINCED 2 IF REALLY SMALL
3TBLS BUTTER
3TBLS OLIVE OIL
1-2 LBS OF JUMBO SHRIMP CLEANED AND DEVEINED
ZEST OF 1 LEMON & JUICE
1LB OF ANGEL HAIR PASTA
3/4 CUP OF HEAVY CREAM (ROOM TEMPERATURE)
1/2 CUP PARMESEAN REGGIANO
SALT AND PEPPER

Directions
1. MINCE GARLIC AND SHALLOT. 2. BRING SALTED WATER TO BOIL FOR PASTA 3. COOK PASTA AL DENTE 4. SAUTEE GARLIC AND SHALLOT IN BUTTER AND OIL UNTIL CARAMELIZED. 5. ADD HEAVY CREAM WHILE STIRRING. 6. LET REDUCE BY 1/4. 7. ADD 1/4 CUP PARMESEAN REGGIANO 8. SALT AND PEPPER TO TASTE 9. ADD SHRIMP AND CONTINUE COOKING. 10. ADD LEMON ZEST & JUICE. 11. ADD PASTA AND TOSS TO COAT. 12. A delicious comfort food recipe for dinner.

Ingredients
1 lb. ground beef
1/4 cup chopped white onion
2 cloves chopped garlic
1 lg. can of cream corn
2-3 cups mashed potatoes
2 tablespoons butter

Directions
Brown the ground beef with the onion and garlic and then drain off the excess grease. Put the ground beef mixture onto the bottom of a lightly greased casserole dish and pour the cream corn evenly on top of the beef mixture. Top the cream corn with the mashed potatoes and spread evenly. Dot the top of the mashed potatoes with butter and place in a pre-heated 350 degree oven for 30 minutes. Enjoy!

A great chili recipe.

Ingredients
1 lb. ground beef
1 pkg. Lipton Onion Soup mix
dash of onion salt
dash of garlic salt
1, 15 oz. can stewed tomatoes (cut into bite size pieces)
1 T. oregano leaves (crushed)
1/4 cup chopped chives
1 T. extra hot chili powder
1 can (15 oz.) red kidney beans

Directions
Cook ground beef with onion soup mix, a dash of onion and garlic salt, and stir occasionally until beef is brown; then drain. Next, stir in stewed tomatoes, the 1 T. of oregano crushed leaves, chopped chives, extra-hot chili powder, and the kidney beans. Heat this mixture to boiling, and then reduce heat and simmer, covered for 1 hour. Stir occasionally. This tastes great served with chopped onions, and/or over corn bread.
