Baked Honey Curry Chicken

Description

This is a delicious baked chicken dish that you can vary depending on the kind of chicken you have on hand. I loved the prep and baking time. The flavors were incredible as well as the moistness of the chicken. Recommend it to anyone who needs a good healthy, sweet and tart chicken recipe.

Ingredients
1 whole chicken cut into pieces or 3-4 split chicken breasts
1/4 cup of butter or margarine
1/2 cup of honey
1/4 cup of spicy brown mustard
1 tsp salt
1 1/2 tsp of curry powder

Directions
Preheat the oven at 350 degrees. Place chicken in a baking dish (glass or metal) with skin side up. Combine butter/margarine, honey, mustard, salt, and curry in a bowl and pour over chicken.

Cover chicken with foil and bake for 30 minutes. Remove cover and continue baking for 45 minutes (whole chicken) 30 minutes chicken breasts) basting every 15 minutes until the chicken is brown.

Description

A delicious pasta dish everyone will love.

Ingredients
2 cloves of garlic
1/2 stick of butter
1 family size pkg. of tortellini
4 zucchinis
1 fresh pkg. of mushrooms (sliced)
1 can of quartered artichoke hearts (sliced)
1 pint half and half
2 cups Parmesan cheese

Directions
Crush and dice garlic and sauté in butter/olive oil until slightly brown in skillet. Slice zucchinis and add them with the mushrooms and garlic in skillet. Let veggies cook for a few minutes then add the artichoke hearts. While vegetables are sautéing, boil water for pasta and cook for about 5-8 minutes. Once pasta has cooked, drain fold into vegetables. Gradually add parmesan and half and half until cheese has a stringy effect. You do not have to use the whole pint. Enjoy!

Description
Quick and easy to prepare. Ready in 1 hour and everyone will love it.

Ingredients
4 boneless, skinless chicken breasts
10 slices swiss cheese
1 can cream of chicken soup, undiluted
1 small package Pepperidge Farms herb seasoned mix
1 stick unsalted butter, melted

Directions
Preheat oven to 350. Spray 11x8" pan with cooking spray. Lay chicken breasts in pan and season with pepper and very little salt (the soup has plenty of sodium in it). Top with swiss cheese and then undiluted soup. Combine herb seasoned mix with melted butter and sprinkle on top of soup. Bake for 1 hour. Serve with rice or mashed potatoes, salad and bread of choice.

Description

A really hearty version of a broccoli cheese soup. My kids love it.

Ingredients
2 cups of cooked, cubed ham
6-7 potatoes, cubed
2 small carrots, grated
1 small onion, chopped
16 oz. bag frozen broccoli (can use fresh, also)
1 lb. Velveeta cheese, cubed
8 cups of water w/ chicken boullion (or chicken broth)
2 tsps. garlic
herbs to taste:
bay leaf, savory, thyme, dill, salt, pepper
6 Tbs. butter
1/4 cup flour
1/4 cup dry creamer
2 cups milk

Directions
Add ham, vegetables, herbs, garlic, onions, water & bouillon (or broth) to a pot, cooking until vegetables are tender. In another pan, melt butter and to it, add flour, stirring constantly until smooth. Next, add creamer and milk alternately, stirring constantly. Finally, add Velveeta and stir until melted. Pour this into the pot with the ham and veggies and mix well. Enjoy!

Description

You must try this incredible shrimp recipe, you will love it!

Ingredients
2 garlic cloves, minced
2 T. butter or margarine
2 lbs. uncooked med. shrimp, peeled
1/2 c. white wine or chicken broth
2 (8 oz.) c. shredded Monterey Jack cheese
2 T. minced fresh parsley

Directions
In a skillet over medium heat, sauté garlic in butter for 1 minute. Add shrimp and cook for 4-5 minutes or until pink. Using slotted spoon, transfer shrimp to a greased 11x7x2" baking dish; set aside and keep warm. Add wine or broth to the skillet and bring to boil. Cook and stir for 5 minutes or until sauce is reduced. Pour liquid over shrimp and top with cheese and parsley. Bake, uncovered, at 350 degrees for 10 minutes or until cheese is melted. Enjoy!

Corn Fritters

Description

Flat style of fritter, lightly browned. Very good as a side dish.

Ingredients
2 cups raw corn- cooked (cut off corn on the cob works best)
1 well-beaten egg
1 1/2 tsp sugar
1/3 tsp salt
1/8 tsp pepper
1 tbsp melted butter
1/2 cup flour
1/2 cup baking powder

Directions
1. Combine corn, egg, sugar, salt, pepper and butter in a large bowl. 2. Mix and sift flour and baking powder into mixture. Mix thoroughly. 3. Drop batter from a spoon into a frying pan with a thin layer of hot oil in it. Brown fritters on both sides.

For those who don't like Beef this is a great tasting BBQ alternative!

Ingredients
1 tablespoon butter, cut into pieces
1 small red onion, 1/2 finely chopped
2 cloves garlic, finely chopped
2 tablespoons tomato paste
1 teaspoon sugar
1 tablespoon Worcestershire sauce, eyeball it
1 1/4 pounds ground chicken
1 tablespoons grill seasoning (recommended: McCormick brand) a palm full
Salt and pepper
4 cornmeal Keiser rolls, split

Directions
In a small skillet over medium heat, melt butter. Add chopped onions, garlic and tomato paste and sweat them for 5 minutes to soften and sweeten. Sprinkle in sugar and remove from heat. Cool in a bowl, 5 minutes. Add tomato paste mixture, Worcestershire to bowl and combine. Add chicken to the bowl then grill seasoning and combine the burgers well to evenly distribute the flavors and form 4 patties. Wash up.
Cook patties 6 minutes on each side over medium-high heat

THIS IS WONDERFUL AND CREAMY AND VERY EASY WITH PRECOOKED POTATOES AND NON DAIRY CREAMER.

Ingredients
2 POTATOES, COOKED IN JACKETS, PEELED AND CUBE
1 LARGE ONION, PEEL AND DICE
1 CUP CELERY, THINLY SLICED
4 TBS BUTTER
3 TBS FLOUR
3CUP NON DAIRY CREAMER, LIQUID
2 CUPS MINCED CLAMS IN THEIR JUICES
1 TSP DRIED OREGANO
1/2 TSP KOSHER SALT
COARSE GROUND BLACK PEPPER TO TASTE

Directions
HEAT A LARGE POT ON THE STOVE TOP. ADD THE ONIONS, CELERY AND THE BUTTER, COOK ON MEDIUM HEAT FOR ABOUT 10 MINUTES. ADD THE FLOUR TO THIS AND STIR, QUICKLY ADD THE LIQUID CREAMER. ADD THE POTATOES TO THIS POT AND SIMMER FOR ABOUT 30 MINUTES. ADD THE JUICES FROM THE MINCED CLAMS. ADD THE SEASONINGS AND RIGHT BEFORE SERVING ADD THE CLAMS AND STIR. IT IS NOW READY TO SERVE.

Description

A simple and easy way to fix mashed potatoes for those of us that cant have dairy.

Ingredients
4-5 lg. Potatoes
chicken or beef bouillon or broth (set aside 1/4 of the broth after cooking the potatoes)
garlic salt (to taste)
black pepper (to taste)
1 teaspoon minced onion flacks
1-2 tablespoons of butter
2-3 slices of thick bacon

Directions
Cut the potatoes into 1/2 inch pieces. Put the potatoes into water with the chicken or beef broth and cook until soft. Set aside 1/4 cup of broth after the potatoes are done. Cut and cook bacon until crispy. Drain and set aside until cool then crumble. In a large mixing bowl add the potatoes, butter, garlic salt, black pepper, onion flakes and add in the broth as needed to make smooth. Mix until desired texture. Fold in the bacon just before serving.

10 CLOVES OF GARLIC MINCED
1 SHALLOT MINCED 2 IF REALLY SMALL
3TBLS BUTTER
3TBLS OLIVE OIL
1-2 LBS OF JUMBO SHRIMP CLEANED AND DEVEINED
ZEST OF 1 LEMON & JUICE
1LB OF ANGEL HAIR PASTA
3/4 CUP OF HEAVY CREAM (ROOM TEMPERATURE)
1/2 CUP PARMESEAN REGGIANO
SALT AND PEPPER

Directions
1. MINCE GARLIC AND SHALLOT. 2. BRING SALTED WATER TO BOIL FOR PASTA 3. COOK PASTA AL DENTE 4. SAUTEE GARLIC AND SHALLOT IN BUTTER AND OIL UNTIL CARAMELIZED. 5. ADD HEAVY CREAM WHILE STIRRING. 6. LET REDUCE BY 1/4. 7. ADD 1/4 CUP PARMESEAN REGGIANO 8. SALT AND PEPPER TO TASTE 9. ADD SHRIMP AND CONTINUE COOKING. 10. ADD LEMON ZEST & JUICE. 11. ADD PASTA AND TOSS TO COAT. 12. SERVE TOPPED WITH REMAINING CHEESE.
