Chicken Swiss Casserole

Description
Quick and easy to prepare. Ready in 1 hour and everyone will love it.

Ingredients
4 boneless, skinless chicken breasts
10 slices swiss cheese
1 can cream of chicken soup, undiluted
1 small package Pepperidge Farms herb seasoned mix
1 stick unsalted butter, melted

Directions
Preheat oven to 350. Spray 11x8" pan with cooking spray. Lay chicken breasts in pan and season with pepper and very little salt (the soup has plenty of sodium in it). Top with swiss cheese and then undiluted soup. Combine herb seasoned mix with melted butter and sprinkle on top of soup. Bake for 1 hour. Serve with rice or mashed potatoes, salad and bread of choice.

Enchilada Casserole


Enchilada Casserole

Description

Corn tortillas layered with seasoned beef, enchilada sauce and Mexican cheese.

Ingredients
2 lbs. ground beef
2 packets taco seasoning
15-20 corn tortillas
2 19 oz. cans of enchilada sauce
4 cups of mexican blend cheese
2 3.8 oz. cans black olives

Directions
Brown hamburger and add packets of taco seasoning, following directions on the back of the packets. Set aside. Preheat oven to 350 degrees. In a 13x9" pan drizzle enchilada sauce to cover the bottom of pan, then tear corn tortillas into fourths and cover the bottom of the pan with them; then cover the tortillas with seasoned ground beef, 1/4 c. enchilada sauce and with cheese (in that order.) Layer until you get to the top of the pan. Next, top the dish with corn tortillas, enchilada sauce, cheese, and black olives. Put pan into a preheated oven for 15-20 minutes. Cut into squares and serve. Serves 10-12.

Grandma's Corn Casserole

Description

A delicious comfort food recipe for dinner.

Ingredients
1 lb. ground beef
1/4 cup chopped white onion
2 cloves chopped garlic
1 lg. can of cream corn
2-3 cups mashed potatoes
2 tablespoons butter

Directions
Brown the ground beef with the onion and garlic and then drain off the excess grease. Put the ground beef mixture onto the bottom of a lightly greased casserole dish and pour the cream corn evenly on top of the beef mixture. Top the cream corn with the mashed potatoes and spread evenly. Dot the top of the mashed potatoes with butter and place in a pre-heated 350 degree oven for 30 minutes. Enjoy!
